Vineyard: the vineyards are placed in the hillsides of Algairén's mountain range, in the derivations of the Iberian System, to an altitude of 649 meters. Merlot and Syrah vineyards were planted 12 years ago and Cabernet Sauvignon was planted 17 years ago. Double cordon as vine training system. Soil is dun limy and reddish with gravel (called “cascajo” in this zone), with calcareous rocky substratum, is a poor soil, and as the vineyards are not irrigated, they gives reduced productions, but of a concentrated grape and of great quality. In addition, we carry out a respectful viticulture with the environment (we do not use insecticides or herbicides).
Elaboration: this wine has been elaborated with grapes selected of the best terroirs of own vineyard. The process involves manual harvest, selection of the grape at the winery and filling vats with the de-stemmed grapes, lowering the temperature with carbonic ice and supporting to 12 centigrade degrees for 7 days. This is followed by fermentation in French oak vats and 28 days of maceration. After being overpumped and stirred by hand, malolactic fermentation takes place in French Allier oak barrel, to remain after 15 months in these barrels.
Tasting: cherry-red color very deep with purplish edge. Great aromatic intensity, with dominant characteristic of red fruits like raspberry and cherry, floral, spicy and mineral notes, vanilla and a present but elegant wood. In mouth it is powerful, concentrated, structured but fresh at the same time, with mature and sweet tannins. In retronasal is long and persistent. It is an expressive and elegant wine.
