Vineyard: the Chardonnay vineyard is placed in Cariñena's plain, to an altitude of 600 meters. Planted 12 years ago with double cordon as vine training system. The soil is formed by gravels of alluvial and colluvial deposits. It is an unirrigated vineyard with a production average less than 3.000 kg per hectare.
In addition, we carry out a respectful viticulture with the environment (we do not use insecticides or herbicides).
Elaboration: this wine has been elaborated with grapes selected of the best terroirs of own vineyard. The process involves manual harvest, selection of the grape at the winery and filling a stainless steel vat with the de-stemmed grapes, lowering the temperature with carbonic ice and supporting to 8 centigrade degrees for 12 hours. After pressing the grapes, the must makes the alcoholic fermentation at a low temperature. Then, the wine remains in the vat three months, with yeast lees and batonnage.
Bottling: the process of bottling this wine was carried out with no previous filtration in April 2017
Tasting: Cherry-red color very deep. Aroma of good intensity, elegant, with mineral notes, fruit in jam, and a great expression of the terroir. In mouth it is powerful, full-bodied, with good concentration and excellent balance, freshly, balsamic and fruity with mature tannins and a aromatic and varietal end.
